Preparation

Boxing day curried turkey pie - Serves 4-6
Preheat the oven to 180°C. Heat 2 tbsp oil in a large saucepan, add 1 chopped onion and 1 chopped red pepper. Cook until soft, stirring occasionally. Add 600-800g shredded cooked turkey, 300g cooked basmati rice, 1 jar Boxing Day Curry Sauce, a small handful of chopped coriander, stir to ensure everything is coated. Season to taste. Transfer rice and curry mix to a large pie dish and level off. Layer 6 to 8 filo pastry sheets, brushing each with oil. Scrunch a little to add texture, the layers can overlap to cover filling. Sprinkle with flaked almonds if you like, cook for 20-25 minutes or until the filo is golden and the filling piping hot. Serve with yoghurt and spicy chutney, enjoy!
